Plunge the world into darkness. Metaphorically or not, the loss of the sun would be hard on all people, and would be definitely hard to reverse by the forces of good, and in that state would be mass panic and chaos, which is all the better to enact your schemes. Alternately, you are not just a wizard, but also Undead, and in this world of magic sunlight is detrimental to the Undead(or just your breed of Undead, if you happen to be a Vampire), and stealing away the sun from the world would plunge it into eternal night, where you and your horde of minions will not be harmed by it or its power ever again.

Steal the sun? Earth is utterly frozen. Everything dies. The solar system flies off to disarray (Planets begin to orbit one another or slingshot them to parts of space unknown.) and all life in the solar system as we know it dies all at once.
And the sun? Why, I'd make my own solar system. And it'll be the exact same thing as the solar system before it, with only one change: Mars will be a habitable planet. Humans will finally have a reason to rush to the space age!
But then I'm supposed to be an asshole wizard, so the moment they enter space, I'll take the sun again to just be a troll.

Non. Its actually a fairly common trope, to be honest, shows up in a lot of fiction.

No, he's not undead, no he's not a mage, not a vampire. Wizard. Mathematical magic. Also, as me and my fiance determined last night, he is a priest of some sort, possibly of a moon cult, possibly not. Also may not have been evil prior to taking the sun. Haven't decided yet.

Wizard...Has never struck me for being necessarily mathematical magic. Really, far as Im aware a Wizard is just a Mage who does a lot of study into their chosen schools, or at least something along those lines. Still, my first point stands-Take away the sun, you've thrown everything out of whack, and it is much, much, MUCH easier to enact your own schemes in that state.

In this world, mages don't use a learned talent, they use natural skill. Wizards have to learn their trade.

Thiiiis could be said. We wouldn't know right off the bat, since we dont know exactly how everything functions. You DID ask why a Wizard would steal the sun, and those be valid reasons for it by all means. In any case, given what information I have, I'll probably stand by my first point.
